Some recipes require reinventing, tweaking, or adjusting while others, well they can only be described as classics and are best left untouched. My late Grammy Sue's homemade banana bread recipe? You guessed it – one of those classic family favorites best left untouched. I remember the ‘original’ recipe card, kept in a decorative blue recipe box on the kitchen counter, written in cursive so elegantly perfect it was nearly impossible to read. That, and it was covered in batter stains and chocolate chip smears from years of love and use. A word to the wise, you’ll probably want to double the recipe because with this perfectly tender loaf and soft crumb, well it'll be tough to keep around for long!

This easy banana bread recipe is a perfect way to use those overly ripe bananas hanging out on your counter. Now the only question that remains; to add chocolate chips or not? If you can't decide whether to add chocolate chips or not, you can attempt the half plain, half chocolate chip loaf like I did here!
Homemade Banana Bread for the WIN!
Homemade banana bread is categorized as a quick bread recipe. This means that the recipe uses baking soda or baking powder instead of yeast to leaven. When making quick breads it’s important to not overmix the batter. If you accidentally overmix your batter (because let's, be honest - we never, do it on purpose) it will further develop the gluten in the bread which will in turn, produce a more dense, tough, and sometimes rubbery texture versus the desired moist, tender, and soft crumb we adore so much. Using a fork or hand whisk to gently mix the batter will ensure a perfect crumb every time!
Making Homemade Banana Bread
Preheat the oven to 350°F. Lightly grease a 9x5 inch loaf pan and set aside. In a small mixing bowl, combine flour, baking soda, and salt; set aside. In a separate mixing bowl, mash bananas with a fork until chunky pureed consistency is achieved. Add the egg, sugar, butter, and vanilla to mashed bananas. Mix until well combined. In small increments, add the dry mixture to wet ingredients. Gently mix batter until moistened. Add chocolate chips, if desired. Pour batter into the lightly greased loaf pan. Bake in oven at 350° for 50-60 minutes, until a toothpick inserted into the center comes out clean. Let bread cool in pan for about 10 minutes before removing from the loaf pan to cool on a wire rack.
Pro Tip: For easy clean up you can make the recipe in one bowl. For this approach, start with wet ingredients in medium-sized mixing bowl and add dry ingredients one-by-one. Being careful again, to not overmix the batter.
Pro Tip: At the 45-minute mark of baking, loosely cover loaf with tin foil to help top from burning while the center of the loaf continues to bake through. Protect the G.B.D. integrity of the loaf! [G.B.D. = Golden Brown and Deliciousness!]

Put your overly ripe bananas to use in this simple homemade banana bread recipe! Moist, tender, and absolutely delicious, it's guaranteed not to last long. Enjoy plain or add chocolate chips to sweeten the deal.
-2 cups All-Purpose Flour
-1 teaspoon baking soda
-1/4 teaspoon salt
-3 (very) ripe bananas
-3/4 cup sugar
-1/4 cup butter, softened
-1 egg, beaten
-1 teaspoon vanilla
*Optional: 1 cup chocolate chips
